  • 3 tbsp mayonnaise
  • 1 tbsp prepared horseradish
  • 1 tbsp grainy mustard
  • 8 slices brioche bread (1/2-inch thick slices)
  • 4 slices smoked Cheddar cheese
  • 6 oz shaved good-quality deli roast beef
  • 1 cup caramelized onions
  • 4 slices smoked mozzarella cheese
  • 2 tbsp butter, at room temperature


1. Preheat CRUX Panini Grill. Meanwhile, mix together mayonnaise, horseradish and mustard. Spread over 4 slices of bread; layer smoked Cheddar slices, roast beef, caramelized onions and smoked mozzarella slices evenly over top. Cap with remaining bread; butter bread slices on the outside.

2. Wearing oven mitts, carefully open lid of panini grill; center 2 sandwiches on lower grill plate. Press handle several times during cooking time to press sandwich. Cook for about 5 minutes or until cheese melts and bread is toasted.

3. Carefully remove sandwiches with oven mitts. Repeat with remaining sandwiches.


  • To caramelize onions, cook 2 large onions in 4 tsp butter with a pinch of salt and sugar in a saucepan set over medium-low heat for 30 to 40 minutes or until golden brown.
  • Add sautéed mushrooms, roasted red peppers and a sprinkle of arugula for a fully loaded steak sandwich.
