Ingredients

  • 5 cups milk
  • 3 cups basmati rice
  • 1 tbsp unsalted butter
  • 1 cup 35% heavy cream, divided
  • 1 cup packed brown sugar
  • 1 cup smooth peanut butter
  • 1 tbsp vanilla extract
  • 1/4 tsp each kosher salt and cinnamon
  • 2 tbsp icing sugar, sifted
  • 3.5 oz dark chocolate, melted
  • 3.5 oz milk chocolate, melted
  • 1 cup chopped toasted peanuts


methodology

1. Add milk, rice and butter to CRUX 20-Cup Fuzzy Logic Rice Cooker. Using WHITE RICE function, program the KEEP WARM time for 10 minutes. Stir in 1/2 cup cream, brown sugar, peanut butter, vanilla, salt and cinnamon, stirring to combine. Close lid and continue to KEEP WARM for 60 minutes or until rice is very tender and creamy. Serve warm (or let cool completely to serve cold).

2. Meanwhile, using electric mixer, whip remaining cream until stiff peaks form. Beat in icing sugar.

3. In layers, spoon rice pudding and drizzles of melted dark and milk chocolate into 12 serving dishes. Top with dollop of whipped cream and sprinkle with peanuts.


Tips:

  • Spike whip cream with a splash of Amaretto or Frangelico if desired.
  • Alternatively, drizzle your favorite store-bought chocolate fudge sauce over top.
